I've had a significant gap between the time I mark "drying end" and how
it's shown in the final graphic - the color coded phase bar at the top of
the graph (drying, Maillard, development).
I thought I found the problem in the config setting of roast phases by
adjusting the drying upper limit to about 5 degrees above my normal drying
time mark. (I had noticed that the default of 300F was capping the phase
color band and accounted for a large discrepancy.) But, it is still off.
The drying, end tick mark always shows the correct time I set, but the graph
phase green band is still not right. My last roast, for example, correctly
notes that I marked end of drying at 5 minutes (325.8F), but the green bar
drying phase shows the end at 5:10 minutes and leads to an erroneous
phase-length percentage. What am I missing?
