I am no expert but would suspect an earth leakage of some sorts from the
cooling fan, causing small micro-voltage spikes through the probe, giving
you the wild readings.
Try earthing your fan to the same earth as your Amprobe so that there is no
PD between them.

I have an Amprobe tmd-56 hooked up to my mac os X and it seems to all be
working fine except when I turn on the cooling fan on my Huky 500, which
causes artisan temps to spike up and down- however on the Amprobe itself it
is reading very steady. If I hook up the thermocouple that came with the
amprobe the fan has no effect. So just curious if anybody else has seen
anything similar to this, or if somehow the heat shield on my thermocouple
could be carrying some sort of signal from the fan? Thanks!
