That sounds very interesting!
In part it sounds like what I do with the Fuji roast controller, which is in turn controlled and monitored by Artisan:

Measuring humidity in the beans is also an option to maybe look into later.
Increasingly, I get the impression that the duration of a roast is less influential than is often assumed, and the end temperature is very decisive.
For instance, I did two very light roasts, both up to the same end temp but one took 8 minutes, the other 16 minutes. They were both about as light, measured using the Tonino, and the taste was very similar. The “long” one tasted more cherry, the “short” one more berry, but quite close together and I personally preferred the “short” one. I do still look for an ideal end temp to make the taste more interesting than just “mellow/light”.
I do not think, personally, that humidity changes in the house / environment is a big factor in most countries.
